Why it works as a meal
An ordinary vegetable salad leaves you hungry within the hour: it has little protein and few calories that sustain satiety. Two things change that here.

The fat profile is favourable too: olive oil supplies monounsaturated fat, the foundation of the Mediterranean pattern that reduced cardiovascular events by roughly a third in high-risk people in the PREDIMED trial.

Ingredients for two servings
- Chicken breast — 300 g. The main protein source. Thigh works too: juicier, but adds about 60 kcal per serving
- Cucumbers — 200 g and tomatoes — 250 g. The salad's base. Choose meaty tomatoes; watery ones flood the bowl
- Bell pepper — 100 g. Crunch and vitamin C, which also improves iron absorption
- Red onion — 50 g. Soak it in cold water, or it overwhelms everything else

- Oregano — 1 tsp. Half in the marinade, half in the dressing. Dried suits this better than fresh

Method: 25 minutes step by step
- Prep the chicken (3 minutes). Butterfly the fillets or pound them to 1.5–2 cm. This is the crucial step: a thick breast dries on the outside before the centre is cooked.
- Marinade (10 minutes, hands-off). Mix a tablespoon of oil, half the lemon juice, grated garlic, half the oregano, salt and pepper. Marinate the chicken and turn to the vegetables.
- Chopping (7 minutes). Cucumbers into thick half-moons, tomatoes into wedges, pepper into strips, onion into thin slivers. The chunky cut isn't sloppiness but tradition: Greek salad is cut in pieces, not diced.
- Onion in water (5 minutes). Cover the sliced onion with cold water, then pat dry. The harshness and bitterness go, the crunch stays.
- Cooking (10 minutes). Hot pan, medium heat, 4–5 minutes a side. Don't flip repeatedly — you want a crust. Done at 74 °C internally.
- Rest (5 minutes). Move to a board and don't cut immediately. Slicing hot meat sends the juices onto the board and leaves the breast dry.
- Assembly (2 minutes). Whisk the dressing, combine vegetables and olives, dress and toss. Top with sliced chicken and feta crumbled by hand.

- Vegetarian version. Drop the chicken and add 300 g of chickpeas across two servings for around 21 g of protein per portion.
- More fibre. Add a handful of rocket or spinach and half an avocado — another 3–4 g of fibre.
